I am on my egg fast again! Hey, summer is nearly here and I have to kick my buns into high gear! In upstate NY we hibernate for nearly six months, so it’s easy to get a little comfy in sweats. I have to break out the shorts and flip flops!
An Egg Fast is a great way to lose unwanted pounds and get your hunger in check. By the second day I usually have to remind myself to eat, the body gets into a state of Ketosis (your body starts using fat to burn as a source of energy) so its great to curb appetite! I’ve come across some great recipes for egg fast because, when your limited you start thinking of all the foods you miss and want! However creativity spawns new ideas so there’s a happy compromise even on a fast. I have been craving sausage and biscuits smothered in country gravy, it won’t get out of my brain. So, my devious little imagination takes off and says -how can I get what I want and still stay within the parameters of this FAST! Now, I have had a delicious egg fast breakfast biscuit from Fluffy Chix Cook (while your there, check out her other great Egg Fast recipes) so I know the biscuit part is within the grasp of my pudgy little fingers. Now how to make a country sausage gravy with out a roux and with out sausage? First, I tried mascarpone cheese and bacon grease with the spices…….FAIL, it broke and was not the right consistency. Second attempt, mascarpone cheese, bacon grease, butter, and xanthan gum…..FAIL, it broke again. Well, by the third attempt I had ran out of mascarpone cheese, however I did have cream cheese! So I decided to cut out the butter and cut back on the bacon grease, there was just too much fat for it not to brake and the mascarpone was not thick enough to hold up the way I wanted. The combination of sage, tarragon and nutmeg has a ghost flavor of sausage, I chose tarragon but you could use ground fennel to replace it too! So the end result, cream cheese, bacon grease, seasonings, and water……great consistency and only took a minute to cook!
Cook your eggs in butter or bacon grease to add a little more fat, this makes it the perfect 1:1 ratio of fat and protein per the egg fast guidelines. This is great with a single egg prepared your favorite way, but even better on that Egg Fast Breakfast Biscuit! Now, don’t just take my word for it….get in the kitchen and whip one up they’re so easy!
- 1 oz cream cheese
- 3 T water
- 1 1/2 t bacon grease
- 1/2 t black pepper
- pinch of nutmeg
- 1/2 t fresh chopped sage or 1/4 t dried sage
- 1/2 t fresh chopped tarragon or 1/4 t dried tarragon
- 1/2 t onion salt
- add all ingredients into non-stick skillet or sauce pan
- heat on low
- stir/whisk all ingredients until smooth
- remove from heat and serve over egg
