Have you ever had fried ice cream?
I remember this from when I was a kid at Chi-Chi’s restaurant! Keep in mind that was the only Mexican food I knew. Imagine this, the servers come out clapping and singing happy birthday, placing a giant sombrero on my tiny kid head and this amazing display of sparklers, candles and FRIED ICE CREAM! Well, I just re-created that moment for myself- minus the pyrotechnics. I can remember the sweetness the crunch and the blend of textures that was so delicious. This recipe mimics that same taste and texture, only we are not “frying” this version. You can get creative with which type of ice cream you want to use, I will provide you with some recipes from fellow LC food bloggers down below.

So there you have it. Low carb fried ice cream, definitely worth trying again, and again, and again!
Note- Carb count will vary depending on the ice cream you use. Recipe and carb count is for coating only
- 2 oz plain pork rinds
- 2 t ground cinnamon
- 2 T granulated Swerve Sweetener
- pinch of salt
- pre-heat oven to 350 degrees
- In a quart size zip lock bag add pork rinds, cinnamon, Swerve, and salt
- crush using meat mallet or rolling pin until you make "crumbs"
- shake bag mixing all ingredients together
- place on parchment lined cookie sheet
- heat in oven for 3 minutes
- remove and let cool
- scoop 8 portions of ice cream and roll in mixture until evenly coated
- serve and enjoy
You can use a food processor for this as well 1 Net carb for total batch of crumbs
